  • Seed rupture and particle-size control – Whole or cracked seeds must be broken to release flavor compounds and achieve the desired texture. Over-processing creates excessive heat and bitterness; under-processing leaves gritty particles.
  • Powder dispersion – Mustard flour, spices, salt, and other dry ingredients tend to form agglomerates that resist wetting in vinegar, water, wine, or other aqueous media.
  • Emulsion formation and stability – Many mustards incorporate oil. Creating a fine, stable oil-in-water emulsion that resists separation during storage is essential for smooth products.

Because energy is concentrated in a small volume rather than distributed throughout the vessel, processing times are dramatically shorter than with conventional agitators, while particle-size distribution remains tightly controlled.
